Saffron, Spice & Stories: Novotel Hyderabad Airport Set to Bring Flavours of Parsi Heritage

The scent of caramelized onions, saffron rice, and slow-cooked meats will soon drift through the air at Novotel Hyderabad Airport, as the hotel prepares to celebrate the rich culinary heritage of India’s Parsi community. From November 6 to 9, 2025, guests are invited to experience the specially curated Parsi Food Promotion, followed by Sunday Brunches throughout November — a month-long tribute to the comforting flavours, festive delicacies, and timeless warmth of Parsi homes.

Curated by Guest Chef Daisy Chinoy, the promotion highlights the community’s distinct balance of sweet, sour, and spicy notes, rooted in Persian heritage and shaped by coastal Indian influences. The menu will feature signature dishes such as Salli Boti, Jardaloo Murghi, Berry Pulao, and Veg Dhansak, paired with Dhansak Rice, Rotli, and Brun Pav, and finished with desserts like Lagan nu Custard and Kulfi Falooda. Live counters will add flair with regional favourites including Masoor Pav and Akoori with Rotli.
